Specialty mushroom guide
Oyster mushrooms
Available in several varieties: white, blue, Phoenix and king oyster.
King oyster
Known for its dense, meaty stem, often used by chefs as a plant-based stand-in for scallops.
White, blue and Phoenix oyster
Delicate textures and subtle woodland aromas, at their best in sautés and sauces.
Specialty mushrooms
Shiitake
A meaty cap with a deep, lightly smoked flavour.
Fresh, it is far milder, juicier and more delicate than the dried version. Excellent simply pan-fried or grilled.
Maitake (hen of the woods)
Grows in dense clusters and develops a powerful woodland umami.
The edges crisp beautifully under the broiler while the centre stays tender. Also ideal for plant-based pulled preparations.
Chestnut mushroom (Pholiota adiposa)
A striking mushroom with a golden, lightly scaled cap.
In the kitchen it stands out for a texture that stays firm and crisp even after long cooking. The flavour is woody, close to sweet hazelnut, which makes it a strong choice for sautés, savoury tarts and braises.
Lion's mane (Hericium erinaceus)
An unmistakable mushroom, a shaggy white mass somewhere between a beard and a mane.
The texture is meaty and absorbent, and the delicate, briny flavour reads as crab or lobster. Ideal for mushroom steaks, plant-based crab cakes, or for soaking up a rich sauce.
Mixed boxes
Mixed mushrooms
A colourful assortment of our best varieties, based on the week's harvest.
Ideal for kitchens that want variety without placing several orders.
Mixed oyster mushrooms
A mix of three or four of our oyster mushrooms.
Right when visual and textural variety matters more than uniformity.
