Unlike our microgreens and mushrooms, these products are not ordered from a catalogue. They are planned around a calendar.
These products come from two distinct supply chains. They share neither the same constraints nor the same predictability.
Our edible flowers are grown on our farm all year round. Alongside them, gourmet produce selected with our network of Quebec market growers — such as hot peppers — comes and goes with the season.
Foraged products, obtained in collaboration with a network of experienced foragers. Nothing here is cultivated.
The difference comes down to one sentence: our crops are ordered, these products are planned.
Available year-round, in the same quantities and the same formats. You order, you receive.
Our edible flowers are grown indoors and available twelve months a year. A foraged product, however, depends on a season that can arrive two weeks earlier or later than usual.
If you want to put one of these products on the menu, you have to plan around availability rather than the other way round.
That is why we work from a calendar rather than a catalogue. We keep a calendar of the products available in each period.
